Happy Cinco De Mayo, amigos! We have something special for you today that fits right in with the festivities. We love the gals over at Oh So Delicioso, and you will too! Their amazing foodie tips and meals are out of this world and their eye for food photography aint bad either. Today we have a super delish recipe from Ms. Aubrey. If you have nothing planned for tonights Cinco De Mayo dinner, MAKE THIS! It’s easy and OH SO good. Take it away, Aubrey!

Hi there! This is Aubrey from the foodie blog Oh So Delicioso. So happy to share one of my favorite dinners with you- Mexican Lettuce Wraps. First of all, I love lettuces wraps. Yes they are low carb, but even despite that I just plain love the crunch of the cool lettuce. Usually lettuces wraps have some sort of zesty tangy meat filling and a few other sides of veggies to pile on top. Lettuces wraps are also typically thought of with Asian cuisine. But hey, Mexican cuisine has taco’s and this is basically a glorified taco! So why not make a Mexican Lettuce wrap?!

The lettuce wrap filling is full of lemon, cumin, garlic, a little onion and all sorts of goodness. I love to add a can of green chili peppers to my meat; they add so much flavor. Ground turkey is lean and healthy, but a good ground beef works just as well.

This is the kind of meal I make on a busy Tuesday evening, because every event or meeting seems to happen on a Tuesday. You can easily prep for this meal in the morning: chop your veggies, thaw your meat. When dinnertime rolls around, throw it all in a large pan and sauté.

Serve with a side washed and patted dry lettuce leaves. Iceberg or Romaine Hearts have a great crunch and shape to hold the meat. Butterleaf Lettuce is dang good but a little pricey. Cilantro, lime, tomatoes and avocado top it all off to make it that much more amazing. Maybe even some of my favorite Green Salsa. A healthy tasty dinner done effortlessly. Your going to love it!

Mexican lettuce wraps

Ingredients
  • 1 lb Ground Turkey (or Beef)
  • 1 4 oz can of Green Chilies
  • 1 Red Bell Pepper, Diced
  • 2 Cloves of Garlic, minced
  • ¼ Red Onion Minced
  • 2 T Lemon Juice
  • 2 tsp Chili Powder
  • 2 tsp Cumin
  • Salt and Pepper to taste
  • Ice Berg Lettuce Leaves
  • Garnish: Diced Tomatoes, Avocado, Cilantro, Lime
Instructions
  1. Saute all ingredients except lettuce and garnishes in a large skillet until meat is cooked through and veggies are tender. Add more or less seasoning according to taste. Serve the meat on a plate, with lettuce leaves and garnishes to the side.
