By now you might know that I like to keep it simple in the kitchen. There is always time for spending hours slaving over a hot stove, but I don’t make a daily habit of it. Clean, fresh and easy is where it’s at. The Pavo Salad fits my ‘clean, fresh and easy’ motto to a T. You can’t eat this salad just one time- you will go back to it again and again. Play with it and see what combinations you can come up with to make it your own. Make it for guests or bring it to a friends house- it will blow their minds!

Serves: 1-2
Ingredients
- 1 Avocado
- 1 Peach
- Balsamic Vinegar
- Olive Oil
- Pink Himalayan Salt
Instructions
- Dice one ripe avocado and one ripe peach and throw them onto a plate or into a bowl. Drizzle olive oil over the top. Drizzle a small amount of balsamic vinegar over the top- just enough to spread around. Put roughly two pinches of pink himalayan salt on the top.
- Things you might choose to add on: Salad (I would go with arugula), Herbs (basil or mint would rock), Other fruit (blueberries, blackberries, raspberries)
